Camping Recipe: Potato Pancakes

Fill up for breakfast or dinner with this delicious camping recipe for potato pancakes. (Don’t forget to top with your favorite hot sauce!)
Ingredients (Feeds 3-4 people)
- 7 cups water
- 4 broth packets (any flavor)
- 1 tsp. chili powder
- 1 tsp. black pepper
- 2 tsp. garlic powder
- 2 cups potato pearls
- 1/2 cup couscous
- 1 1/2 cup flour (any kind)
- 1/3 pound cheese cubed
- Butter or oil for frying
- Optional: ham or bacon bits
Directions
- Boil water
- Add broth packets and spices
- Add potato pearls, couscous, and flour
- Remove pot from stove and stir in cheese until well mixed
- Cover and let sit for 10 minutes
- Shape handfuls of batter into patties and coat with flour
- Fry in butter or oil, with lid on, over medium-high heat until patties are raised, golden grown, and crispy
- Flip to cook on both sides
- Let cool to solidify, and serve with salsa, hot sauce, or ketchup
