Camping Recipe: Potato Pancakes

Fill up for breakfast or dinner with this delicious camping recipe for potato pancakes. (Don’t forget to top with your favorite hot sauce!)

Ingredients (Feeds 3-4 people)

  • 7 cups water
  • 4 broth packets (any flavor)
  • 1 tsp. chili powder
  • 1 tsp. black pepper
  • 2 tsp. garlic powder
  • 2 cups potato pearls
  • 1/2 cup couscous
  • 1 1/2 cup flour (any kind)
  • 1/3 pound cheese cubed
  • Butter or oil for frying
  • Optional: ham or bacon bits

Directions

  • Boil water
  • Add broth packets and spices
  • Add potato pearls, couscous, and flour
  • Remove pot from stove and stir in cheese until well mixed
  • Cover and let sit for 10 minutes
  • Shape handfuls of batter into patties and coat with flour
  • Fry in butter or oil, with lid on, over medium-high heat until patties are raised, golden grown, and crispy
  • Flip to cook on both sides
  • Let cool to solidify, and serve with salsa, hot sauce, or ketchup
